Ingredients

  • 4 cups romaine lettuce, chopped
  • 1 can red beans, rinsed
  • 1 cup corn grain
  • 1 cup cherry tomatoes
  • 1 carrot, grated
  • 1 cup mushrooms, sliced
  • 1 cup cheese, grated
  • ½ cup sour cream
  • 1 cup salsa
  • salt and pepper
  • fresh coriander

Instructions

  1. Place the chopped romaine lettuce in a bowl.
  2. On top add red beans, corn, tomatoes, carrot, mushroom, and cheese.
  3. Serve with sour cream and salsa. Sprinkle with fresh coriander.
