Ingredients

Maple Syrup Vegetable Bites

  • ½ rutabaga
  • 2 potatoes
  • 1 onion, finely chopped
  • 3 tbsp honey
  • salt and pepper, to taste

Carrot, Parsnip, and Oregano Vegetable Bites  

  • 2 carrots
  • 2 parsnips
  • 1 potato
  • 1 tsp oregano
  • salt and pepper, to taste

Sweet Potato Vegetable Bites

  • 2 large sweet potatoes
  • ¼ cup fresh parsley
  • 1 tsp ground coriander
  • salt and pepper, to taste

Instructions

  1. Preheat oven to 400°F.
  2. Grate vegetables using a food processor or grater.
  3. Remove all water.
  4. Mix vegetables with the other ingredients.
  5. Divide the mixture into four equal portions and put them into muffin tins.
  6. Bake and cook for 25 minutes.
  7. Serve with sour cream.
