Moroccan Couscous

Ingredients

  • 1 1/4 cups boiling water
  • 1 1/2 cups couscous
  • 2 tbsp olive oil
  • 1 red pepper
  • 1 cup cauliflower
  • 1 onion
  • 1 tsp Moroccan spice or sumac
  • 1/2 cup chickpeas
  • 1/2 cup green olives
  • 1/2 cup feta cheese
  • salt and pepper, to taste
  • 1/4 cup chopped mint

Instructions

  1. In a saucepan, bring water to a boil. Remove from heat, add couscous, then cover and let it sit for 5 minutes.
  2. In a skillet, add olive oil and cook pepper, cauliflower, onion, and spices over medium high heat for 5 minutes.
  3. In a bowl mix couscous, vegetable mixture, chickpeas, olives, feta, salt and pepper, and mint.
